Our full-size Chocolate Fudge Cakes was so popular with trade customers, that we decided why not make an mini individual size version.
The Mini Chocolate Fudge Cake is a sandwich of two pieces of our rich chocolate, dense, fudgey sponge filled with whipped chocolate ganache. The cake is then covered with our house dark chocolate ganache and decorated with white chocolate.
What is chocolate ganache? Its usually a combination of dark chocolate and double cream. Its very simple to make- a good recipe is 100g good-quality dark chocolate and 100ml heavy cream. Heat cream until hot, not boiling, add chocolate and stir until smooth and glossy. Milk chocolate ganache- we suggest replace the dark chocolate with 125g good-quality milk chocolate and 100ml double cream. White chocolate ganache- we suggest 100ml white chocolate and 100ml double cream.
All products are hand-made by pastry chefs made with natural ingredients. Contains no artificial colourings, flavourings or preservatives.Shelf-life 3-4 days stored in fridge.
