Our Lemon Meringue Tart consists of a hand-made all butter pastry shell, an amazingly zingy, silky hand-made lemon curd filling and a sweet, soft Italian Meringue topping- the perfect sweet/tart balance.
What makes our Lemon Meringue Tart amazing? We think it’s the rather sublime lemon curd filling. Instead of allowing the butter to melt into the mix, we allow it to cool before adding the butter. This means the butter emulsifies in the curd, resulting in a wonderful silky, and velvety, smooth texture.
What is Italian Meringue: Its a soft, marshmallow-like meringue, which is made by adding a sugar syrup cooked to 121C to beaten egg whites and whisking until cool. This cooks the eggs. As this is a strong meringue due to content of egg white, its used as the base of our fruit mousses and macarons.
All products are hand-made by pastry chefs made with natural ingredients.
