Our signature dessert, so we definitely think that it is something special:

With its dome-shaped construction, the dessert is built around a French-style dark chocolate mousse made using Callebaut 811 (cocoa content 54.5%), whipped cream from Carlow artisan producer The Village Dairy. To juxtapose against the softness of the chocolate mousse, we have added some praline crunch, which adds texture and  a wonderful deep rich praline element to the dessert. With a light and sweet Duchesse sponge at its base, Émile is finished with a shiny, miroir chocolate glaze and decorated with Pailleté Feuilletine which adds further crunch.

This is a rich, indulgent dessert for lovers of chocolate desserts.

Pailleté Feuilletine is the original French biscuit crunch widely used by Pâtisseries in the Francophone world.

All products are hand-made by pastry chefs made with natural ingredients. Contains no artificial colourings, flavourings or preservatives.Shelf-life 3-4 days stored in fridge.
