Émile
With its dome-shaped construction, the dessert is built around a French-style dark chocolate mousse made using Callebaut 811 (cocoa content 54.5%), whipped cream from Carlow artisan producer The Village Dairy. To juxtapose against the softness of the chocolate mousse, we have added some praline crunch, which adds texture and a wonderful deep rich praline element to the dessert. With a light and sweet Duchesse sponge at its base, Émile is finished with a shiny, miroir chocolate glaze and decorated with Pailleté Feuilletine which adds further crunch.
