Hand-made in our Carlow production kitchen, the addition of the original Baileys Irish cream and hand-made caramel with a hint of salt results in a deliciously decadent cheesecake. The whiskey and dairy base of Baileys beautifully complements the dairy flavours of our rich cheesecake base recipe. Add the salted caramel and the result is pure indulgence! As with all of our cheesecakes, it’s set on a chunky digestive buttery base. Finally, it’s finished with a sweet Chantilly cream rosette.
Wonder how caramel is made? Well, there are numerous ways to make caramel. In our kitchen, we make three different types of caramel. Caramel can consist simply of sugar -heat it until it changes to a deep brown colour, approx 170C. Move the saucepan around every few minutes, do not stir and protect your eyes with googles. Our caramels are either a combination of sugar and cream, of sugar, cream and butter or sugar, butter and condensed milk which we use for our Millionaires Shortbread (caramel square).
